Description

Indulge in the rich and creamy flavors of Sicilian pasta with a luxurious pistachio sauce. This dish is a perfect blend of savory pancetta, nutty pistachios, and creamy cheese


Ingredients

– 150 grams pancetta, cut into small cubes

– 1 small onion, finely diced

– 3/4 cups chopped unsalted pistachios

– 2 cups heavy cream (or 35% cooking cream)

– 500 grams pasta (penne, rigatoni, or other of your choice)

– 2 tbsp. grated Parmigiano or Pecorino Romano cheese, plus more for serving


Instructions

1. In a large skillet, cook the pancetta over medium heat until crispy. Add the diced onion and cook until translucent.

2. Stir in the chopped pistachios and heavy cream, simmer for a few minutes until the sauce thickens.

3. Cook the pasta according to package instructions, then toss in the creamy pistachio sauce. Sprinkle with grated cheese before serving.


Notes

– For a vegetarian option, substitute pancetta with mushrooms or sun-dried tomatoes.

– Add a touch of heat by sprinkling red pepper flakes on top before serving.
