Description

  • 1 medium-sized avocado
  • 2 tablespoons red onion, finely diced
  • 1 teaspoon fresh lime juice
  • 1 1/2 teaspoons chipotles in adobo sauce, finely chopped

For the burger

  • 1 pound raw shrimp
  • 1 large egg
  • 1/4 cup packed cilantro leaves
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly cracked black pepper
  • olive oil for the pan
  • about 8 thin slices vine-ripened tomato
  • 1 small handful baby lettuces
  • 4 burger buns, lightly toasted

Instructions

  1. Prepare the guacamole: Mash the avocado in a bowl and mix in the red onion, lime juice, chipotles, and salt.
  2. Make the burger patties: In a food processor, pulse the shrimp until finely chopped. Add in the egg, cilantro, salt, cumin, and pepper. Form into patties.
  3. Cook the shrimp burgers: Heat olive oil in a pan and cook the patties until golden brown on both sides.
  4. Assemble the burgers: Place a shrimp patty on each bun, top with guacamole, tomato slices, and lettuce.
