Description

Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. In a large skillet or pot, heat the vegetable oil over medium heat.
  2. Add the onion, bell pepper, and celery. Cook, stirring occasionally, until the vegetables are tender (about 5 minutes).
  3. Add the minced garlic, Cajun seasoning, smoked paprika, black pepper, and salt. Stir well to combine and cook for another 1-2 minutes until fragrant.
  4. Add the sliced sausage to the pot and cook until it begins to brown (about 3-4 minutes).
  5. Add the cooked shrimp and cook for an additional 2-3 minutes until heated through.
  6. Stir in the cooked rice and chicken broth. Mix well to combine and bring to a simmer.
  7. Cover and reduce heat to low. Cook for 10 minutes, allowing the flavors to meld together. Serve hot.

Notes

Feel free to adjust the seasoning to taste. Add more Cajun seasoning if you like it spicy
