This classic southern dish features creamy cheddar grits topped with flavorful shrimp cooked in bacon and spices.
Ingredients
– 4 cups chicken broth (low sodium or no sodium added)
– 1 cup stone-ground grits
– 1 teaspoon salt
– 1/2 teaspoon garlic powder
– 1/2 cup heavy cream
– 1 cup sharp cheddar cheese (shredded)
– 2 tablespoons butter
– 1 pound large shrimp (peeled and deveined)
– 4 slices bacon (chopped)
– 1 small onion (finely diced)
– 2 cloves garlic (minced)
– 1 teaspoon smoked paprika
– 1/2 teaspoon cayenne pepper (optional, for heat)
– 1/2 teaspoon dried thyme
– 1/2 cup chicken broth (low sodium)
– 2 tablespoons lemon juice
– 2 tablespoons chopped parsley (for garnish)
Instructions
1. In a saucepan, bring the chicken broth to a boil. Stir in the grits, salt, and garlic powder. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until creamy.
2. Stir in the heavy cream, cheddar cheese, and butter until cheese is melted. Keep warm.
3. In a skillet, cook the bacon until crispy. Add onion and garlic, cooking until softened. Add shrimp, paprika, cayenne, and thyme, cooking until shrimp is pink.
4. Pour in chicken broth and lemon juice, simmering for a few minutes. Serve shrimp mixture over the cheesy grits and garnish with parsley.
Notes
– For extra flavor, try adding some diced bell peppers or mushrooms to the shrimp mixture.
– To make it healthier, use turkey bacon and low-fat cheese in the grits.
