Shrimp:
- 1.5 lb raw shrimp, peeled and deveined
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 2 tablespoons olive oil
Creamed Corn:
- 2 tablespoons salted butter
- 1/2 cup chopped onion
- 5 cloves garlic, minced
- 1.5 cups cooked corn kernels
- 1 teaspoon smoked paprika
- 1 cup half-and-half
- 4 oz feta cheese, divided
- 2 small limes
- fresh cilantro
Instructions
- Season Shrimp: Toss shrimp with chili powder, salt, and olive oil in a bowl.
- Cook Shrimp: In a large skillet over medium heat, cook shrimp until pink and cooked through, about 2-3 minutes per side. Remove from skillet and set aside.
- Make Creamed Corn: In the same skillet, melt butter and sauté onion and garlic until fragrant. Add corn, paprika, half-and-half, and half of the feta cheese. Cook until heated through and creamy.
- Finish Dish: Stir in the juice of 1 lime. Serve the creamy corn mixture topped with shrimp, remaining feta cheese, and fresh cilantro. Enjoy!
