Description

This One Pot Taco Pasta combines the bold flavors of taco seasoning with tender pasta, beef, and melted cheese. It’s a perfect one-pot meal that is quick, delicious, and sure to please the entire family. Packed with flavor and easy to make, this recipe will become a weeknight favorite!


Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (4 oz) green chilies, diced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 2 cups elbow macaroni (or your choice of pasta)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream (for garnish)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Brown the beef: In a large pot, heat over medium-high heat and cook the ground beef, breaking it apart until browned. Drain excess fat if necessary.
  2. Sauté veggies: Add the diced onion, bell pepper, and garlic to the pot, cooking until softened, about 5 minutes.
  3. Season: Stir in the taco seasoning and cook for another minute to bring out the flavors.
  4. Add liquids and pasta: Pour in the diced tomatoes, green chilies, beef broth, and heavy cream. Stir well to combine. Bring the mixture to a simmer.
  5. Cook the pasta: Add the elbow macaroni to the pot. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  6. Finish: Stir in the shredded cheddar cheese until melted and smooth. Adjust seasoning with salt and pepper.
  7. Serve: Garnish with a dollop of sour cream and fresh cilantro if desired. Serve hot!

Notes

  • You can substitute ground turkey or chicken for the beef for a leaner option.
  • Add more chili peppers or jalapeños for extra heat if desired.
