- 1 cup shredded mozzarella cheese

- 1/2 cup bell pepper, diced (optional)
- 12 large eggs
- 1/2 cup milk (whole or 2%)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika (optional)
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Cook the sausage: In a large skillet, cook the sausage over medium heat until browned and crumbled, about 5–7 minutes. Drain excess grease if needed.
- Prepare the casserole base: In the prepared baking dish, spread the thawed hash browns in an even layer. Top with cooked sausage, diced onions, bell pepper, and both shredded cheeses.
- Mix the egg mixture: In a bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, paprika, and red pepper flakes. Pour the egg mixture evenly over the sausage and hash brown layers.
- Bake: Place the casserole in the preheated oven and bake for 45–50 minutes, or until the eggs are set and the top is lightly golden brown.
- Cool and serve: Let the casserole cool for a few minutes before cutting into squares. Serve warm.
