  • 2 sausage links or 1 cup sausage crumbles (use turkey or plant-based sausage if preferred)
  • 4 large eggs
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (optional, cheddar, mozzarella, or pepper jack)
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cook the Sausage:

    • If using sausage links, cook them in a skillet over medium heat until browned. If using crumbles, cook until no longer pink. Set aside.
  3. Scramble the Eggs:

    • In a bowl, whisk together eggs, salt, and pepper. Scramble in a skillet over medium heat until soft and fluffy.
  4. Assemble the Roll-Ups:

    • Unroll the crescent dough and separate into triangles. Place a spoonful of scrambled eggs, a sausage link (or crumbles), and cheese (if using) onto each triangle.
