Ingredients:
- 18–20 large Shrimp, peeled and deveined, butterfly shape
- 1 cup Cornstarch
- 1 long fresh Thai Red Chilli, finely chopped
- 2 long dried Red Chilies, roughly chopped
- 2 Green Onions, sliced
- 1 tbsp Vegetable Oil + Oil for frying
- some Coriander for garnish
- Lime wedges to serve

Marinade:
- 1 tbsp Light Soy Sauce
- 1 tbsp Chinese Cooking Wine
- 1 Egg, whisked

Salt and Pepper Mix:
- 1 tbsp Sichuan Peppercorns
- 1 tbsp Black Peppercorns
- 1 tbsp Sea Salt
Instructions
- Marinate the shrimp: In a bowl, mix the shrimp with the marinade ingredients. Let it marinate for 30 minutes.
- Prepare the salt and pepper mix: Grind the Sichuan peppercorns, black peppercorns, and sea salt together.
- Coat the shrimp: Toss the marinated shrimp in cornstarch until fully coated.
- Fry the shrimp: Heat oil in a pan and fry the shrimp until crispy and golden brown.
- Season and serve: Sprinkle the salt and pepper mix on the fried shrimp, garnish with green onions, red chilies, and coriander. Serve with lime wedges.
Notes
- For extra heat, add more red chilies or chili flakes to the salt and pepper mix.
- Adjust the seasoning according to your taste preferences.
