Description

These Salt and Pepper Crispy Shrimp are a delicious combination of tender shrimp coated in a crispy cornstarch batter, seasoned with a flavorful blend of salt, pepper, and spices. Serve them with lime wedges for a zesty kick!

Ingredients:

  • 1820 large Shrimp, peeled and deveined, butterfly shape
  • 1 cup Cornstarch
  • 1 long fresh Thai Red Chilli, finely chopped
  • 2 long dried Red Chilies, roughly chopped
  • 2 Green Onions, sliced
  • 1 tbsp Vegetable Oil + Oil for frying
  • some Coriander for garnish
  • Lime wedges to serve
  • Marinade:

  • 1 tbsp Light Soy Sauce
  • 1 tbsp Chinese Cooking Wine
  • 1 Egg, whisked
  • Salt and Pepper Mix:

  • 1 tbsp Sichuan Peppercorns
  • 1 tbsp Black Peppercorns
  • 1 tbsp Sea Salt

Instructions

  1. Marinate the shrimp: In a bowl, mix the shrimp with the marinade ingredients. Let it marinate for 30 minutes.
  2. Prepare the salt and pepper mix: Grind the Sichuan peppercorns, black peppercorns, and sea salt together.
  3. Coat the shrimp: Toss the marinated shrimp in cornstarch until fully coated.
  4. Fry the shrimp: Heat oil in a pan and fry the shrimp until crispy and golden brown.
  5. Season and serve: Sprinkle the salt and pepper mix on the fried shrimp, garnish with green onions, red chilies, and coriander. Serve with lime wedges.

Notes

  • For extra heat, add more red chilies or chili flakes to the salt and pepper mix.
  • Adjust the seasoning according to your taste preferences.
