Crispy Rice
- 3 cup Cooked Sushi Rice short grain rice
- 2 tbsp Rice Vinegar
- 1 tbsp Sugar
- 1 tsp Salt
- Vegetable Oil for frying
Spicy Salmon
- 1 lb Sushi-grade Salmon
- 4 tbsp Kewpie Mayo
- 2 tbsp Sriracha
- 2 tbsp Scallion
- 2 tsp Soy Sauce
- 2 tsp Sesame Oil
Serving
- Sliced Avocado
- Jalapeno thinly sliced
- Black and White Sesame Seed toasted
Instructions
- Prepare Crispy Rice: Mix rice vinegar, sugar, and salt into cooked sushi rice. Form into small patties and fry in vegetable oil until crispy.
- Prepare Spicy Salmon: Mix Kewpie mayo, sriracha, scallion, soy sauce, and sesame oil. Toss with sushi-grade salmon.
- Assemble Dish: Place crispy rice patties on a plate, top with spicy salmon mixture, sliced avocado, jalapeno, and toasted sesame seeds.
Notes
- Make sure the sushi rice is sticky enough to form patties.
- You can adjust the spiciness by adding more or less sriracha.
