Description

This Slow Cooker Cowboy Casserole is a hearty and comforting dish packed with ground beef, potatoes, beans, and cheese. Slow-cooked to perfection, this easy meal is bursting with rich flavors and is perfect for busy weeknights or cozy family dinners.

  • 1 small onion, diced
  • 3 cups potatoes, diced (peeled or unpeeled)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1/2 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon red pepper flakes (optional, for spice)

Instructions

  1. In a skillet over medium heat, brown the ground beef with diced onions until fully cooked. Drain excess fat.
  2. In a slow cooker, layer the diced potatoes, cooked beef mixture, kidney beans, corn, and diced tomatoes.
  3. In a small bowl, whisk together the cream of mushroom soup, beef broth, garlic powder, onion powder, paprika, black pepper, and salt. Pour over the ingredients in the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.
  5. In the last 20 minutes of cooking, sprinkle shredded cheddar cheese on top and cover until melted.
  6. Serve warm, garnished with fresh parsley or green onions, if desired.

Notes

  • For extra richness, swap cream of mushroom soup for cream of cheddar or add a splash of heavy cream.
  • Want more spice? Add diced jalapeños or extra red pepper flakes.
  • Ground turkey or sausage can be used instead of beef.
