- 1 small onion, diced
- 3 cups potatoes, diced (peeled or unpeeled)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 can (14.5 oz) diced tomatoes with juice
- 1/2 cup beef broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon red pepper flakes (optional, for spice)
Instructions
- In a skillet over medium heat, brown the ground beef with diced onions until fully cooked. Drain excess fat.
- In a slow cooker, layer the diced potatoes, cooked beef mixture, kidney beans, corn, and diced tomatoes.
- In a small bowl, whisk together the cream of mushroom soup, beef broth, garlic powder, onion powder, paprika, black pepper, and salt. Pour over the ingredients in the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.
- In the last 20 minutes of cooking, sprinkle shredded cheddar cheese on top and cover until melted.
- Serve warm, garnished with fresh parsley or green onions, if desired.

- For extra richness, swap cream of mushroom soup for cream of cheddar or add a splash of heavy cream.
