- 2 cups Cherries cut in half, washed, pitted

- 5 TBSP Unsalted butter, melted
- 1/3 cup Oil, canola or vegetable
- 1 tsp Pure vanilla extract
- 3/4 cup All-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 TBSP Cornstarch
- 1 tsp Salt
- 1 cup Semi-sweet chocolate chips
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- Prepare cherries: Toss the halved cherries with a sprinkle of sugar and set aside.
- Mix wet ingredients: In a mixing bowl, whisk together sugar, eggs, egg yolk, melted butter, oil, and vanilla extract.
- Add dry ingredients: Sift in flour, cocoa powder, cornstarch, and salt. Mix until just combined.
- Assemble brownies: Fold in chocolate chips and prepared cherries. Pour the batter into the prepared pan.
- Bake: Bake for about 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool and serve: Let the brownies cool in the pan before slicing and serving.
Notes
- You can add a handful of chopped nuts for extra crunch and flavor.
- For a gooey texture, slightly underbake the brownies and let them cool completely before slicing.
