  • 4 medium-sized beets, trimmed and scrubbed
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste

For the Goat Cheese Mixture:

  • 1 cup goat cheese, softened
  • 1/2 cup cream cheese, softened
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste

For Assembly:

  • 1/2 cup chopped pistachios, toasted
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Fresh greens or crackers, for serving

Instructions

  1. Roast the Beets: Preheat the oven to 400°F. Toss beets with olive oil, salt, and pepper. Roast for 45-60 minutes until tender. Let cool, then peel and dice.
  2. Make the Goat Cheese Mixture: In a bowl, combine goat cheese, cream cheese, honey, lemon juice, salt, and pepper. Mix until smooth.
  3. Assemble the Log: Spread goat cheese mixture on a sheet of plastic wrap, top with roasted beets, pistachios, parsley, and chives. Roll into a log shape. Refrigerate until firm.
  4. Serve: Unwrap and serve with fresh greens or crackers.
