- 1 lb (450g) refrigerated or frozen cheese tortellini
- 2 cups heavy cream
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp olive oil (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Crockpot: Lightly grease the inside of the Crockpot with olive oil (optional).
- Add Ingredients: Place the tortellini, heavy cream, diced tomatoes, chicken broth, garlic powder, Italian seasoning, salt, and pepper into the Crockpot. Stir to combine.
- Cook: Cover and cook on low for 3–4 hours or on high for 1.5–2 hours, until the tortellini is tender and the sauce is creamy.
- Finish the Dish: Once cooked, stir in the Parmesan cheese until melted and fully incorporated.
- Serve: Garnish with chopped fresh parsley and serve immediately.
Notes
- If you prefer a thicker sauce, use less chicken broth or add extra Parmesan cheese.
- You can substitute the heavy cream with half-and-half or milk for a lighter version, but the sauce may be thinner.
- Frozen tortellini works just as well as fresh and can be added directly without thawing.
