Description

This hearty breakfast casserole is packed with eggs, sausage, cheese, and crispy hash browns for the ultimate morning comfort food. Easy to make ahead and customizable with your favorite ingredients, it’s perfect for feeding a crowd!

  • 8 large eggs
  • 1 lb (450 g) breakfast sausage (or bacon, cooked and crumbled)
  • 3 cups (450 g) frozen hash browns (shredded or diced)
  • 1 1/2 cups (170 g) shredded cheddar cheese
  • 1/2 cup (60 g) shredded mozzarella cheese (optional for extra gooeyness)
  • 1 cup (240 ml) milk (or heavy cream for extra richness)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional, for a smoky kick)

Instructions

 Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch (23×33 cm) baking dish with butter or nonstick spray.

2. Cook the Meat

  1. In a skillet over medium heat, brown the sausage (or cook the bacon).
  2. Drain excess fat and set aside.

3. Layer the Casserole

  1. Spread the frozen hash browns evenly in the greased baking dish.
  2. Sprinkle the cooked sausage (or bacon) over the hash browns.
  3. Add the shredded cheddar and mozzarella cheese on top.

4. Mix the Eggs

  1. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and paprika.
  2. Pour the egg mixture evenly over the casserole.

5. Bake Until Set

  1. Place in the oven and bake for 35–40 minutes, or until the eggs are set and the top is golden.
  2. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Use frozen hash browns – No need to thaw; they crisp up beautifully!
Let it rest before slicing – This helps it firm up and makes serving easier.
Customize your mix-ins – Add bell peppers, mushrooms, spinach, or jalapeños for extra flavor.
