Ingredients

Scale
  • 12 oz pasta (penne or fettuccine)
  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup reserved pasta water (as needed)
  • Chopped parsley (for garnish)

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta until al dente according to package instructions.
  • Reserve ¼ cup of pasta water, then drain and set aside.

2. Prepare the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken with salt, black pepper, and cayenne pepper.
  • Cook for 6-7 minutes per side, until golden brown and fully cooked.
  • Remove from pan, let it rest, then slice into strips.

3. Make the Sauce

  • In the same skillet, melt butter and sauté garlic for 30 seconds.
  • Stir in heavy cream, red pepper flakes, and a pinch of salt.
  • Simmer for 2-3 minutes, allowing the sauce to thicken.

4. Combine Everything

  • Add cooked pasta to the sauce, tossing to coat.
  • If the sauce is too thick, add a splash of reserved pasta water.
  • Stir in Parmesan cheese and sliced chicken until well combined.

5. Serve and Enjoy!

  • Serve hot, garnished with extra Parmesan, parsley, and red pepper flakes for more heat.

Notes

Don’t overcook the chicken: Let it rest before slicing for the juiciest texture.
Adjust the spice level: Reduce or increase cayenne and red pepper flakes to your preference.
Use pasta water wisely: It helps achieve a silky, creamy sauce. Add a little at a time as needed.
