For the Raspberry Filling:
- 1 cup raspberry preserves or jam
- 1 tbsp cornstarch (to thicken the jam)
- 2 tbsp water
- 1 tbsp butter, melted (for brushing)
For the Glaze (optional):
- 3/4 cup powdered sugar
- 1–2 tbsp lemon juice (for a tangy finish)
- 1 tbsp milk or cream
Instructions
- Prepare the Brioche Dough: Mix flour, yeast, sugar, and salt. Add warm milk, butter, eggs, vanilla, and lemon zest. Knead until smooth. Let rise.
- Make the Raspberry Filling: Combine raspberry preserves, cornstarch, and water. Cook until thickened. Roll out dough, spread filling, roll, and shape into a loaf.
- Bake: Let rise, bake until golden brown. Brush with melted butter. Cool.
- Glaze (optional): Mix powdered sugar, lemon juice, and milk. Drizzle over loaf.
