Description

Quick Spicy Chicken with Jalapenos is a simple yet flavorful dish that features tender chicken cooked with fresh jalapenos, garlic, and a blend of spices. The heat from the jalapenos combined with the savory chicken makes for a spicy, savory, and satisfying meal that’s perfect for any weeknight dinner!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 34 fresh jalapenos, sliced (remove seeds for less heat)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1 tbsp lime juice (optional, for added tang)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the Chicken:
    1. Season both sides of the chicken breasts with cumin, paprika, chili powder, salt, and pepper.
    2. Heat the olive oil in a large skillet over medium-high heat.
  2. Cook the Chicken:
    1. Add the seasoned chicken breasts to the skillet and cook for about 5–7 minutes per side, or until the chicken is cooked through and has reached an internal temperature of 165°F (75°C).
    2. Remove the chicken from the skillet and set it aside to rest.
  3. Cook the Jalapenos:
    1. In the same skillet, add the minced garlic and sliced jalapenos. Cook for 2–3 minutes, stirring occasionally, until the garlic is fragrant and the jalapenos soften slightly.
  4. Combine and Serve:
    1. Slice the cooked chicken into strips or cubes and return it to the skillet with the garlic and jalapenos. Toss everything together for 1–2 minutes, allowing the flavors to combine.
    2. Drizzle with lime juice (if using) and garnish with fresh cilantro. Serve immediately.

Notes

  • Adjust the number of jalapenos depending on how spicy you like your dish.
  • This dish pairs well with rice, tortillas, or a simple green salad.
  • For an extra kick, consider adding a splash of hot sauce or a pinch of red pepper flakes.
