Instructions

  1. Cook the Rice: In a medium saucepan, bring 3 cups of water to a boil. Add the rice and a pinch of salt. Cover and reduce the heat to low. Cook for 15-18 minutes, or until the rice is tender and the water is absorbed. Set aside.
  2. Cook the Chicken: While the rice cooks, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
