Instructions

  1. Cook the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  3. Add the Cheese and Vegetables: Stir in the Parmesan cheese, sun-dried tomatoes, and spinach. Cook for 2-3 minutes until the sauce thickens slightly and the spinach wilts.
  4. Combine the Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for another 3-4 minutes to heat the chicken through and allow the flavors to meld together.
  5. Serve and Garnish: Serve the creamy Tuscan-style chicken with a drizzle of sauce, and garnish with fresh basil if desired.
