  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 bay leaf
  • 1 1/2 pounds potatoes, peeled and cubed

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Kielbasa: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove the kielbasa and set aside.
  2. Cook the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until softened, approximately 5 minutes. Add the minced garlic, paprika, and dried thyme, cooking for an additional minute.
  3. Simmer the Soup: Pour in the chicken broth and add the diced tomatoes (with their juice), bay leaf, and cubed potatoes. Return the browned kielbasa to the pot. Bring to a boil, then reduce the heat to low, cover, and let simmer until the potatoes are tender, about 15 minutes.
  4. Season and Serve: Remove the bay leaf. Taste and adjust seasoning with salt and black pepper as needed. Ladle into bowls, garnish with chopped fresh parsley, and serve hot.
