Description

Pumpkin Queso is a rich, creamy twist on traditional queso dip, blending smooth pumpkin puree with sharp cheddar, cream cheese, and warm spices. It’s the perfect dip for fall gatherings, game nights, or any cozy occasion where you want a unique and flavorful appetizer.

Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 4 oz cream cheese, softened
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup milk or heavy cream (adjust for consistency)
  • 1/4 cup sour cream
  • Salt & pepper, to taste

Instructions

Step 1: Sauté the Spices
Heat olive oil in a skillet over medium heat. Add chili powder, cumin, smoked paprika, and garlic powder. Stir for about 1 minute until fragrant.

Step 2: Add the Pumpkin
Stir in the pumpkin puree and cook for 2-3 minutes to blend the flavors.

Step 3: Melt the Cheese
Reduce heat to low and mix in the cream cheese until melted. Gradually add the shredded cheddar, stirring constantly until smooth.

Step 4: Adjust Consistency
Slowly pour in the milk or heavy cream, stirring until the queso reaches your desired thickness.

Step 5: Add Sour Cream
Stir in the sour cream for a tangy balance to the richness.

Step 6: Season & Serve
Taste and adjust seasoning with salt, pepper, or extra spices if needed. Serve warm with tortilla chips, fresh veggies, or crusty bread.

Notes

  • For a spicier kick, add a pinch of cayenne or diced jalapeños.
  • Use full-fat cream cheese for a velvety texture.
  • Reheat gently on the stovetop over low heat, adding milk as needed.
