- 1 lb baby potatoes (Yukon Gold or red), halved
- 1/2 lb fresh green beans, trimmed
- 2 tbsp olive oil or butter
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried Italian seasoning (or fresh herbs like parsley or thyme)
- 1/4 tsp red pepper flakes (optional, for spice)
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
Instructions
- Boil the potatoes – Bring a large pot of salted water to a boil. Add the halved baby potatoes and cook for about 10–12 minutes, until fork-tender.
- Add the green beans – In the last 3–4 minutes of cooking, add the trimmed green beans to the same pot. Cook until bright green and slightly tender, then drain.
- Sauté the garlic – In a large skillet, heat olive oil or butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
- Combine & season – Add the drained potatoes and green beans to the skillet. Season with salt, black pepper, Italian seasoning, and red pepper flakes (if using). Stir well and cook for another 3–5 minutes.
- Finish & serve – Remove from heat and sprinkle with grated Parmesan cheese, if desired. Serve warm and enjoy!
Notes
- You can swap baby potatoes for russet or fingerling potatoes—just cut them into small pieces.
- Fresh green beans work best, but frozen can be used (just thaw and drain first).
- For extra flavor, add a squeeze of lemon juice or crispy bacon bits before serving
