  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Creamy Bacon Pan Sauce:

  • 4 slices of bacon, diced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste

Instructions

  1. Season the Pork Chops:
    Pat the pork chops dry with paper towels. Season both sides with garlic powder, onion powder, paprika, salt, and pepper.
  2. Sear the Pork Chops:
    Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown and cooked through (145°F internal temperature). Remove from the skillet and set aside.
  3. Cook the Bacon:
    In the same skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
  4. Make the Sauce:
    1. Add minced garlic to the bacon fat and sauté for 30 seconds until fragrant.
    2. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
    3. Reduce the heat to low and stir in the heavy cream, Parmesan cheese, Dijon mustard, and thyme. Simmer gently for 3-4 minutes until the sauce thickens.
  5. Combine and Serve:
    Return the pork chops and cooked bacon to the skillet. Spoon the creamy sauce over the pork chops and simmer for an additional 2-3 minutes to reheat. Taste and adjust seasoning with salt and pepper as needed.
  6. Garnish and Enjoy:
    Serve immediately, garnished with extra thyme if desired.
