Instructions
- Season the Pork Chops:
Pat the pork chops dry with paper towels. Season both sides with garlic powder, onion powder, paprika, salt, and pepper. - Sear the Pork Chops:
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown and cooked through (145°F internal temperature). Remove from the skillet and set aside. - Cook the Bacon:
In the same skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet. - Make the Sauce:
- Add minced garlic to the bacon fat and sauté for 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
- Reduce the heat to low and stir in the heavy cream, Parmesan cheese, Dijon mustard, and thyme. Simmer gently for 3-4 minutes until the sauce thickens.
- Combine and Serve:
Return the pork chops and cooked bacon to the skillet. Spoon the creamy sauce over the pork chops and simmer for an additional 2-3 minutes to reheat. Taste and adjust seasoning with salt and pepper as needed. - Garnish and Enjoy:
Serve immediately, garnished with extra thyme if desired.
