Instructions
- Combine Ingredients: In a cocktail shaker or a large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Secure the lid and shake well to thoroughly combine all the ingredients and chill the mixture.
- Prepare Glasses: Fill two 12 oz low-ball cocktail glasses about three-quarters full with ice cubes to keep the drink chilled and refreshing.
- Pour Punch: Pour half of the prepared cocktail mix (approximately 1 cup per glass) over the ice in each glass, allowing the punch to cool and slightly dilute with the melting ice for a perfect balance.
- Garnish and Serve: Garnish each glass with a skewer of fresh pineapple pieces for an appealing tropical presentation. Serve immediately for best flavor and fizz.
Notes
- You can store any leftover punch in the refrigerator for up to 24 hours; however, the ice will melt and water down the drink, and the soda will lose its carbonation.
- If you prefer to avoid the coconut flavor, substitute the coconut rum with white/clear rum or spiced rum, which also pair well in this recipe.
- For a different twist, replace the lemon-lime soda with ginger ale or lemon-lime sparkling water to adjust sweetness and carbonation.
