Description

These Pesto Chicken and Avocado Bacon Salad Wraps are a delicious combination of grilled chicken, creamy avocado, crispy bacon, and tangy blue cheese, all wrapped in a flavorful basil pesto and Caesar dressing.

Caesar dressing

  • 1/2 cup mayo

  • 1/3 cup grated parmesan

Wraps

  • 4 large tortillas
  • 4 cups shredded lettuce
  • 1 avocado, diced
  • 1/4 cup fresh basil, torn
  • 1/2 cup basil pesto
  • 11 1/2 cups grilled chicken, cubed or shredded
  • 6 slices cooked bacon, crumbled
  • 1/2 cup crumbled blue cheese or shredded cheddar

Instructions

  1. Prepare Caesar dressing: In a bowl, whisk together mayo, olive oil, lemon juice, mustard, Worcestershire sauce, garlic, salt, pepper, and parmesan.
  2. Assemble wraps: Spread basil pesto on each tortilla, then layer with lettuce, avocado, basil, grilled chicken, bacon, and cheese. Drizzle with Caesar dressing.
  3. Wrap: Roll up the tortillas tightly, tucking in the sides as you go. Slice in half and serve.
