Description

These homemade Peanut Butter Easter Eggs are a delightful treat for the holiday season. A creamy peanut butter filling coated in white chocolate with a colorful speckled finish, perfect for Easter celebrations.

Peanut Butter Egg Filling:

  • 1 1/4 cup natural, runny peanut butter (no sugar added)
  • 1/4 cup maple syrup
  • 1/4 cup powdered sugar
  • 1/3 cup almond flour
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

White Chocolate Coating:

  • 8 ounces white chocolate melting wafers
  • 2 teaspoons coconut oil
  • 1/2 teaspoon blue spirulina + 1/4 teaspoon matcha powder (or use a 2:1 ratio of any blue and green food dye)
  • For the speckles: 1 teaspoon cocoa powder + 1 tablespoon water

Instructions

  1. Prepare Peanut Butter Egg Filling: Mix all the filling ingredients in a bowl until well combined.
  2. Shape into eggs: Form the mixture into egg shapes and place on a lined baking sheet.
  3. Coat in white chocolate: Melt white chocolate wafers with coconut oil, dip each egg in the mixture, and place back on the baking sheet.
  4. Add speckles: Mix cocoa powder with water and splatter over the eggs for a speckled effect.
  5. Chill: Refrigerate until set, then serve and enjoy!
