Description

These peanut butter and jelly blondies bring a nostalgic twist to a classic treat. With a rich, chewy peanut butter base swirled with sweet jam, they’re the perfect combination of salty and sweet. Ready in just 30 minutes, these blondies are a must-try for any PB&J lover!

Ingredients

Units Scale
  • 1/2 cup unsalted butter, melted
  • 1/2 cup creamy or crunchy peanut butter
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup jam (strawberry, raspberry, or grape)

Instructions

  1. Preheat and Prepare

    • Preheat the oven to 350°F (175°C).

    • Line an 8×8-inch baking pan with parchment paper.

  2. Make the Batter

    • In a mixing bowl, whisk together melted butter, peanut butter, and brown sugar until smooth.

    • Stir in the eggs and vanilla extract.

    • Fold in the flour, baking powder, and salt until just combined.

  3. Swirl in the Jam

    • Spread the batter evenly in the prepared pan.

    • Drop spoonfuls of jam on top and use a knife to gently swirl it into the batter.

  • Bake

    • Bake for 25-30 minutes or until the edges are golden and the center is set.

    • Let cool completely before slicing.

Notes

  • Don’t overmix the batter: Stir until just combined to keep the blondies soft and chewy.
  • Use natural peanut butter carefully: Ensure it’s well-stirred to prevent texture issues.
  • Let them cool before cutting: This helps them set properly for clean slices.
