Ingredients
– Single homemade pie crust for a 9 inch pie
– Crumb Topping:
– 1/2 cup all-purpose flour
– 3 tablespoons unsalted butter, very soft
– 2 tablespoons light brown sugar, packed
– 2 tablespoons granulated sugar
– 1/8 teaspoon ground cinnamon
– Peach Pie Filling:
– 5 cups fresh peaches, peeled and cut into 1 inch pieces
– 1/2 cup light brown sugar, packed
– 1/4 cup cornstarch
– 1 1/2 tablespoons fresh lemon juice
– 1 1/2 teaspoons vanilla extract
– 1 teaspoon ground cinnamon
– 1 large egg
– 1 teaspoon water
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine the peaches, brown sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Mix well and set aside.
3. Roll out the pie crust and place it in a 9-inch pie dish. Pour the peach filling into the crust.
4. In a separate bowl, mix the flour, butter, brown sugar, granulated sugar, and cinnamon until crumbly. Sprinkle the crumb topping over the peach filling.
5. In a small bowl, whisk together the egg and water. Brush the egg wash over the crust.
6. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
Notes
– For a twist, try adding a handful of chopped pecans to the crumb topping.
