Description

A comfort food classic, Paula Deen’s Amazing Chicken Casserole is creamy, cheesy, and loaded with tender chicken. With a crispy, buttery cracker topping, this dish is perfect for family dinners, potlucks, or any gathering.

  • 3 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup crushed Ritz crackers (or your preferred cracker)
  • 2 tablespoons melted butter
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat Oven and Prepare Baking Dish:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a casserole dish with cooking spray or butter.
  2. Make the Casserole Mixture:
    In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir in 1 1/2 cups of shredded cheddar cheese. Mix everything until well combined.
  3. Assemble the Casserole:
    Transfer the chicken mixture into the prepared baking dish and spread it evenly.
  4. Add the Topping:
    In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole. Then, sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  5. Bake:
    Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
  6. Serve:
    Remove the casserole from the oven and let it rest for a few minutes before serving. Garnish with chopped green onions, if desired.
