Description
Papparoti, also known as coffee buns, are deliciously soft buns with a crispy coffee topping. These buns are filled with butter and have a sweet, coffee-infused crust that adds a unique flavor to the traditional bun recipe.

Buns:
- 2/3 cup whole milk (160g), warm (~110F)
- 1/4 cup sugar (55g)
- 2 teaspoons active dry yeast
- 2 1/2 cups all purpose flour (325g)
- 1 large egg
- 1 teaspoon salt
- 1/4 cup unsalted butter, softened (60g)
For filling the buns:

- 1/2 cup salted or unsalted butter, cold and cut into 8 equal cubes (113g)
Coffee crust:

- 5 tbsp butter (70g)
- 1/4 cup sugar (55g)
- 1 large egg
- 2 tsp instant coffee mixed in 2 teaspoon water
- 1/2 cup all purpose flour (65g)
- 1 tbsp cornstarch
Instructions
- Prepare the Dough: In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5 minutes. Add flour, egg, salt, and softened butter. Knead until smooth. Let it rise for 1 hour.
- Fill the Buns: Divide dough into 8 pieces, flatten each piece, and place a cube of butter in the center. Seal and shape into a ball.
- Make the Coffee Crust: Cream butter and sugar. Add egg, coffee mixture, flour, and cornstarch. Mix until smooth.
- Assemble and Bake: Top each bun with coffee crust. Bake at 350F for 15-20 minutes until golden.
Notes
- You can adjust the sweetness of the coffee crust by adding more or less sugar.
- Experiment with different fillings like chocolate or Nutella for a tasty variation.
