Description

A quick and flavorful twist on classic lasagna, this One-Pan Skillet Lasagna is ready in just 30 minutes—no layering or baking required! Made in a single pan with broken lasagna noodles, a rich meat sauce, and gooey cheese, this is the perfect weeknight comfort meal

Ingredients

Scale
  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt & black pepper, to taste
  • 8 lasagna noodles, broken into large pieces
  • 2 cups chicken or vegetable broth
  • 1/2 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Fresh basil for garnish
  • Substitutions & Add-Ins:

    • Use ground turkey, chicken, or plant-based crumbles for a lighter version.
    • Add mushrooms, spinach, or zucchini for extra veggies.
    • Swap ricotta for cottage cheese for a lighter twist.

Instructions

  1. Brown the Meat:

    • Heat a large skillet over medium heat.
    • Add ground beef or sausage and cook until browned, breaking it apart as it cooks.
    • Drain excess grease if necessary.
  2. Sauté Aromatics:

    • Add onion and garlic and cook until softened (2-3 minutes).
  3. Build the Sauce:

    • Stir in crushed tomatoes, tomato sauce, Italian seasoning, red pepper flakes, salt, and pepper.
  4. Cook the Noodles:

    • Break lasagna noodles into large pieces and stir them into the sauce.
    • Pour in broth, cover, and let simmer on low heat for 15-20 minutes, stirring occasionally.
  5. Add the Cheese:

    • Dollop ricotta cheese over the lasagna, then sprinkle with mozzarella and parmesan.
    • Cover and let the cheese melt (5 minutes).
  • Serve & Enjoy:

    • Garnish with fresh basil and serve hot!

Notes

  • Don’t overcrowd the pan: Make sure there’s enough liquid to cook the noodles evenly.
  • Stir occasionally: This prevents the noodles from sticking to the bottom.
  • Use fresh cheese: Pre-shredded cheese doesn’t melt as well as freshly grated cheese.
