Description

  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken and sear for 4-5 minutes per side until golden brown. Remove from the pan and set aside.
  3. In the same skillet, sauté the onion until translucent, about 2-3 minutes. Add the garlic and cook for an additional minute.
  4. Stir in the uncooked rice, chicken broth, and heavy cream. Mix well and bring to a simmer.
  5. Place the chicken breasts back into the skillet, nestling them into the rice mixture. Reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  6. Remove the chicken and stir the Parmesan cheese into the rice until creamy. Adjust seasoning as needed.
