Ingredients
Units
Scale
- 2 large boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Add the chicken and sear for 4-5 minutes per side until golden brown. Remove from the pan and set aside.
- In the same skillet, sauté the onion until translucent, about 2-3 minutes. Add the garlic and cook for an additional minute.
- Stir in the uncooked rice, chicken broth, and heavy cream. Mix well and bring to a simmer.
- Place the chicken breasts back into the skillet, nestling them into the rice mixture. Reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Remove the chicken and stir the Parmesan cheese into the rice until creamy. Adjust seasoning as needed.
- Slice the chicken and serve over the creamy rice. Garnish with fresh parsley.
Notes
- For added flavor, consider incorporating vegetables such as peas, spinach, or mushrooms during the cooking process.
- If the mixture becomes too thick, adjust the consistency by adding a splash of additional chicken broth or cream.
