- 4 chicken breasts or thighs
- 1/3 cup balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp honey
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 2 carrots, sliced
Instructions
- Prep the Chicken: In a bowl, combine balsamic vinegar, olive oil, honey, garlic, Italian seasoning, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Cook the Chicken: In a large pan, cook chicken for 6-7 minutes on each side until cooked through. Remove and set aside.
- Cook the Veggies: In the same pan, add more olive oil if needed and cook bell peppers, zucchini, cherry tomatoes, broccoli, and carrots until tender.
- Combine: Return chicken to the pan and toss everything together. Serve hot.
