Description

This One Pan Balsamic Chicken and Veggies recipe is a delicious and easy-to-make meal that combines tender chicken with a medley of colorful vegetables, all coated in a flavorful balsamic glaze.


Ingredients

  • 4 chicken breasts or thighs
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 2 carrots, sliced

Instructions

  1. Prep the Chicken: In a bowl, combine balsamic vinegar, olive oil, honey, garlic, Italian seasoning, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Cook the Chicken: In a large pan, cook chicken for 6-7 minutes on each side until cooked through. Remove and set aside.
  3. Cook the Veggies: In the same pan, add more olive oil if needed and cook bell peppers, zucchini, cherry tomatoes, broccoli, and carrots until tender.
  4. Combine: Return chicken to the pan and toss everything together. Serve hot.
