- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
- 1 tablespoon peanut butter (for drizzle, optional)
Instructions
Prepare the Oat Mixture
- In a medium bowl, mix the rolled oats, peanut butter, honey, vanilla extract, and salt until well combined. The mixture should be sticky and hold together when pressed.
Fill the Muffin Cups
- Line a muffin tin with paper liners or use a silicone mold. Evenly distribute the oat mixture, pressing it firmly into the bottom of each cup.
Melt the Chocolate
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
Top with Chocolate

Chill and Set
