- 2 tablespoons honey
Skewers:
- 8 oz mozzarella pearls
- 4 oz prosciutto
- 12 basil leaves
- 12 cocktail skewers
Dressing:
- 3 tablespoons pickling liquid
- 1/4 cup olive oil
- 2 cloves garlic, minced
- herbs from pickling liquid, minced
- salt and pepper to taste
Instructions
- Pickled Peaches: In a saucepan, combine white balsamic vinegar, white vinegar, water, salt, and honey. Add peaches, rosemary, and thyme. Simmer until peaches are tender. Let cool.
- Skewers: Thread mozzarella, prosciutto, basil, and pickled peaches onto skewers. Repeat for remaining ingredients.
- Dressing: Whisk together pickling liquid, olive oil, garlic, herbs, salt, and pepper.
