Description

These flavorful skewers combine the sweetness of pickled peaches with the creaminess of mozzarella and the saltiness of prosciutto, making them a perfect appetizer for any occasion.

Pickled Peaches:

  • 6 small crisp ripe peaches, pitted and quartered
  • 1 sprig rosemary
  • 3 sprigs thyme
  • 1 cup white balsamic vinegar
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 teaspoons kosher salt
  • 2 tablespoons honey

Skewers:

  • 8 oz mozzarella pearls
  • 4 oz prosciutto
  • 12 basil leaves
  • 12 cocktail skewers

Dressing:

  • 3 tablespoons pickling liquid
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • herbs from pickling liquid, minced
  • salt and pepper to taste

Instructions

  1. Pickled Peaches: In a saucepan, combine white balsamic vinegar, white vinegar, water, salt, and honey. Add peaches, rosemary, and thyme. Simmer until peaches are tender. Let cool.
  2. Skewers: Thread mozzarella, prosciutto, basil, and pickled peaches onto skewers. Repeat for remaining ingredients.
  3. Dressing: Whisk together pickling liquid, olive oil, garlic, herbs, salt, and pepper.

Notes

  • Feel free to customize these skewers with additional ingredients like cherry tomatoes or olives.
  • Make the pickled peaches ahead of time for easier assembly on the day of serving.
