Description

Ingredients

  • 1 1/2 cups almond flour
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1/2 cup orange juice
  • 1/2 cup lemon juice
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch cake pan.
  2. In a large bowl, whisk together almond flour, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted butter, vanilla extract, orange zest, lemon zest, orange juice, and lemon juice.
  4. Slowly fold the wet ingredients into the dry ingredients until fully combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the glaze by mixing 1 tablespoon orange juice, 1 tablespoon lemon juice, and ½ cup powdered sugar.
  8. Once the cake has cooled for about 10 minutes, drizzle the glaze over the top of the cake.
  9. Let the cake cool completely before serving.
