- 4 medium-sized russet potatoes, peeled and diced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup shredded cheddar cheese
- 1/2 cup crispy bacon bits
- 1/4 cup green onions, chopped (for garnish)
- Salt and pepper, to taste
Instructions
- Cook the Potatoes:
Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook for 10-12 minutes or until the potatoes are tendaer. Drain well and return the potatoes to the pot. - Mash the Potatoes:
Use a potato masher or hand mixer to mash the potatoes until smooth. Add the sour cream, milk, butter, garlic powder, onion powder, salt, and pepper, and continue mashing until creamy. - Add the Cheese and Bacon:
Stir in 1/2 cup of shredded cheddar cheese and most of the bacon bits (reserve a small amount for topping). - Bake:
Transfer the mashed potatoes to a baking dish and top with the remaining cheese and bacon bits. Bake at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly. - Garnish and Serve:
Remove from the oven and garnish with chopped green onions before serving. Enjoy!
Notes
- For extra creaminess, you can add cream cheese or Greek yogurt to the mashed potatoes.
- You can make this dish ahead of time and refrigerate it before baking. Just add a few extra minutes to the baking time if you’re cooking from the fridge.
