Description

Mississippi Mud Potatoes are a flavorful and indulgent side dish perfect for any meal. These potatoes are loaded with creamy cheese, savory seasonings, and topped with crispy bacon bits for an irresistible combination. A fun twist on traditional mashed potatoes, this dish is sure to become a favorite at your next family dinner or gathering.


Ingredients

  • 4 medium-sized russet potatoes, peeled and diced
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1/4 cup green onions, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Cook the Potatoes:
    Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook for 10-12 minutes or until the potatoes are tendaer. Drain well and return the potatoes to the pot.
  2. Mash the Potatoes:
    Use a potato masher or hand mixer to mash the potatoes until smooth. Add the sour cream, milk, butter, garlic powder, onion powder, salt, and pepper, and continue mashing until creamy.
  3. Add the Cheese and Bacon:
    Stir in 1/2 cup of shredded cheddar cheese and most of the bacon bits (reserve a small amount for topping).
  4. Bake:
    Transfer the mashed potatoes to a baking dish and top with the remaining cheese and bacon bits. Bake at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:
    Remove from the oven and garnish with chopped green onions before serving. Enjoy!

Notes

  • For extra creaminess, you can add cream cheese or Greek yogurt to the mashed potatoes.
  • You can make this dish ahead of time and refrigerate it before baking. Just add a few extra minutes to the baking time if you’re cooking from the fridge.
