- 2 carrots, sliced
- 2 stalks celery, sliced

- 1 zucchini, quartered lengthwise and sliced
- 2 cloves garlic, minced
- 1 (15-ounce) can red kidney beans
- 1 (15-ounce) can cannellini beans
- 1 (15-ounce) can diced tomatoes with Italian herbs
- 1 (15-ounce) can tomato sauce
- 1 cup frozen cut green beans
- 1/2 cup grated Parmesan cheese, divided
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup shredded mozzarella cheese
- chopped fresh basil and/or oregano
Instructions
- Preheat Oven: Preheat the oven to 375°F.
- Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add carrots, celery, onion, zucchini, and garlic. Sauté until vegetables are tender.
- Assemble Casserole: In a large bowl, combine sautéed vegetables, beans, diced tomatoes, tomato sauce, green beans, 1/4 cup Parmesan cheese, Italian seasoning, salt, and pepper. Mix well.
- Cook Pasta: Cook mafalda pasta according to package instructions until al dente. Drain.
- Combine Pasta and Sauce: Add cooked pasta to the vegetable mixture and stir to combine.
- Top with Cheese: Transfer the pasta mixture to a casserole dish. Sprinkle with mozzarella cheese and remaining Parmesan cheese.
- Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
