Mexican Lasagna – No Lasagna Noodles!

Description

A delicious twist on traditional lasagna using flour tortillas instead of noodles, layered with seasoned ground beef, refried beans, cheese, and taco sauce.


Ingredients

– 1 1/2 pounds ground beef

– 1/4 cup water

– 1 (1 ounce) packet taco seasoning mix

– 12 (8 inch) flour tortillas

– 1 (14 ounce) can refried beans

– 3 cups shredded Colby-Jack cheese

– 1 (8 ounce) jar taco sauce

– 1 cup shredded Colby-Jack cheese


Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large skillet over medium heat, cook and stir ground beef until browned. Drain excess grease. Stir in water and taco seasoning mix.

3. Spread a thin layer of beef mixture in the bottom of a 9×13 inch baking dish. Cover with a layer of 6 tortillas, half the refried beans, and 1 ½ cups of cheese. Repeat layers.

4. Top with remaining tortillas, taco sauce, and 1 cup of cheese.

5. Bake in preheated oven for 25 minutes, or until heated through and cheese is melted.


Notes

– You can add diced tomatoes, sliced black olives, or jalapenos for extra flavor.

– For a healthier version, use lean ground turkey or chicken instead of beef.
