Description

These Melt-in-Your-Mouth French Dip Sandwiches feature tender, slow-cooked beef served on soft rolls with melted cheese, all served with a savory au jus dipping sauce. Perfect for a satisfying dinner that’s sure to impress.

  • 2 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) beef broth
  • 1/2 cup soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 6 hoagie rolls or French baguettes
  • 6 slices provolone or Swiss cheese
  • 1 tablespoon butter (optional for toasting rolls)

Instructions

  1. Sear the beef: Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned (about 4-5 minutes per side). Transfer the beef to a slow cooker.
  2. Cook the onions and garlic: In the same skillet, add sliced onions and garlic. Cook until softened, about 3 minutes. Add the beef broth, soy sauce, thyme, rosemary, and bay leaf. Stir to combine and bring to a simmer. Pour the mixture over the beef in the slow cooker.
  3. Slow cook the beef: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fork-tender and can be easily shredded.
  4. Assemble the sandwiches: Once the beef is cooked, remove it from the slow cooker and shred it with two forks. Discard the bay leaf. Toast the hoagie rolls with butter, if desired.
  5. Serve: Pile the shredded beef onto each toasted roll, top with a slice of cheese, and serve with a small bowl of the au jus (broth mixture) for dipping.
