- 2 lbs beef chuck roast
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) beef broth
- 1/2 cup soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 6 hoagie rolls or French baguettes
- 6 slices provolone or Swiss cheese
- 1 tablespoon butter (optional for toasting rolls)
Instructions
- Sear the beef: Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned (about 4-5 minutes per side). Transfer the beef to a slow cooker.
- Cook the onions and garlic: In the same skillet, add sliced onions and garlic. Cook until softened, about 3 minutes. Add the beef broth, soy sauce, thyme, rosemary, and bay leaf. Stir to combine and bring to a simmer. Pour the mixture over the beef in the slow cooker.
- Slow cook the beef: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fork-tender and can be easily shredded.
- Assemble the sandwiches: Once the beef is cooked, remove it from the slow cooker and shred it with two forks. Discard the bay leaf. Toast the hoagie rolls with butter, if desired.
- Serve: Pile the shredded beef onto each toasted roll, top with a slice of cheese, and serve with a small bowl of the au jus (broth mixture) for dipping.

- You can use different types of cheese, like cheddar or mozzarella, for a variation.
- For extra flavor, add sautéed mushrooms or peppers to the sandwich.
