- 1 (16 oz) can refried beans
- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- 1 teaspoon garlic powder

- 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
For Serving:
- Tortilla chips
- Sliced jalapeños (optional)
- Chopped cilantro (optional)
- Diced green onions (optional)
Instructions
Cook the Meat
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease and stir in the taco seasoning.
Prepare the Dip Mixture
- In a large bowl, mix the refried beans, cream cheese, sour cream, garlic powder, onion powder, and chili powder until smooth. Stir in the cooked meat, 1 cup of shredded cheese, and the drained Rotel.
Bake Until Bubbly
- Preheat your oven to 375°F (190°C). Spread the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining cheese on top and bake for 20–25 minutes until hot and bubbly.
Serve and Enjoy
- Remove from the oven and let it cool slightly. Garnish with jalapeños, cilantro, or green onions if desired. Serve warm with tortilla chips.
Notes
- For extra spice, use hot Rotel or add diced jalapeños to the dip.
- Swap ground beef for chorizo or sausage for a different flavor.
- Make it ahead: Prepare the dip, store in the fridge, and bake before serving.
