Ingredients

Units Scale

For the Dip:

  • 1 pound ground beef (or ground sausage)
  • 1 (1 oz) packet taco seasoning
  • 1 (16 oz) can refried beans
  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 2 cups shredded Mexican blend cheese (divided)
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained

For Serving:

  • Tortilla chips
  • Sliced jalapeños (optional)
  • Chopped cilantro (optional)
  • Diced green onions (optional)

Instructions

Cook the Meat

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease and stir in the taco seasoning.

Prepare the Dip Mixture

  1. In a large bowl, mix the refried beans, cream cheese, sour cream, garlic powder, onion powder, and chili powder until smooth. Stir in the cooked meat, 1 cup of shredded cheese, and the drained Rotel.

Bake Until Bubbly

  1. Preheat your oven to 375°F (190°C). Spread the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining cheese on top and bake for 20–25 minutes until hot and bubbly.

Serve and Enjoy

  1. Remove from the oven and let it cool slightly. Garnish with jalapeños, cilantro, or green onions if desired. Serve warm with tortilla chips.

Notes

  • For extra spice, use hot Rotel or add diced jalapeños to the dip.
  • Swap ground beef for chorizo or sausage for a different flavor.
  • Make it ahead: Prepare the dip, store in the fridge, and bake before serving.
