Ingredients

  • 12 oz fettuccine or pasta of choice
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining. Set aside.
  2. Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant. Stir in heavy cream, chicken broth, and sun-dried tomatoes. Bring to a gentle simmer.
  4. Add Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Stir until the cheese melts and the sauce thickens slightly.
  5. Return the shrimp to the skillet and toss to coat in the sauce. Add cooked pasta and mix well. If the sauce is too thick, stir in reserved pasta water, a little at a time, until desired consistency is reached.
  6. Garnish with fresh basil and serve immediately
