- 12 oz fettuccine or pasta of choice
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining. Set aside.
- Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant. Stir in heavy cream, chicken broth, and sun-dried tomatoes. Bring to a gentle simmer.
- Add Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Stir until the cheese melts and the sauce thickens slightly.
- Return the shrimp to the skillet and toss to coat in the sauce. Add cooked pasta and mix well. If the sauce is too thick, stir in reserved pasta water, a little at a time, until desired consistency is reached.
- Garnish with fresh basil and serve immediately
