Ingredients
For the Chicken:
-
2 boneless, skinless chicken breasts, sliced
-
1 teaspoon Italian seasoning
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
1 tablespoon olive oil
For the Sauce:
- 2 tablespoons butter
- 1/2 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust for spice level)
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
For the Pasta:
- 12 ounces pasta (penne, fettuccine, or rigatoni)
- Fresh basil, for garnish
- Extra Parmesan cheese, for serving
Instructions
1. Cook the Chicken
-
Season chicken slices with Italian seasoning, salt, and black pepper.
-
Heat olive oil in a large pan over medium-high heat.
-
Sear the chicken for 4-5 minutes per side, until golden brown and cooked through.
-
Remove from pan and set aside.
2. Sauté the Aromatics
-
In the same pan, melt butter over medium heat.
-
Add onion and cook until softened (about 2 minutes).
-
Stir in garlic, red pepper flakes, and sun-dried tomatoes, cooking for 1 minute until fragrant.
3. Make the Creamy Sauce
-
Pour in chicken broth, stirring to deglaze the pan. Let simmer for 2 minutes.
-
Stir in heavy cream and Parmesan cheese, cooking until smooth and creamy.
-
Season with salt and black pepper to taste.
4. Combine Everything
-
Slice the cooked chicken and return it to the pan.
-
Toss in the cooked pasta, stirring until evenly coated in the sauce.
5. Serve and Enjoy
-
Garnish with fresh basil and extra Parmesan.
-
Serve hot and enjoy with garlic bread or a fresh salad.
Notes
- Sear the chicken well – A golden crust adds extra flavor to the sauce.
- Use freshly grated Parmesan – Pre-grated cheese doesn’t melt as smoothly.
- Cook pasta al dente – It holds up better in the sauce.
