  • 2 boneless, skinless chicken breasts, sliced

  • 1/2 small onion, finely chopped

  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste

For the Pasta:

  • 12 ounces pasta (penne, fettuccine, or rigatoni)
  • Fresh basil, for garnish
  • Extra Parmesan cheese, for serving

Instructions

1. Cook the Chicken

  • Season chicken slices with Italian seasoning, salt, and black pepper.

  • Heat olive oil in a large pan over medium-high heat.

  • Sear the chicken for 4-5 minutes per side, until golden brown and cooked through.

  • Remove from pan and set aside.

2. Sauté the Aromatics

  • In the same pan, melt butter over medium heat.

  • Add onion and cook until softened (about 2 minutes).

  • Stir in garlic, red pepper flakes, and sun-dried tomatoes, cooking for 1 minute until fragrant.

3. Make the Creamy Sauce

  • Pour in chicken broth, stirring to deglaze the pan. Let simmer for 2 minutes.

  • Stir in heavy cream and Parmesan cheese, cooking until smooth and creamy.

  • Season with salt and black pepper to taste.

4. Combine Everything

  • Slice the cooked chicken and return it to the pan.

  • Toss in the cooked pasta, stirring until evenly coated in the sauce.

5. Serve and Enjoy

  • Garnish with fresh basil and extra Parmesan.

  • Serve hot and enjoy with garlic bread or a fresh salad.
