- 3/4 cup drained julienne-cut sundried tomatoes in oil with herbs
- 1/2 cup finely chopped shallot
- 4 large garlic cloves, finely chopped
- 1 1/2 tsp dried Italian seasoning
- 1/2 tsp crushed red pepper
- 2 tbsp tomato paste
- 1/2 cup lower-sodium chicken broth
- 1 cup heavy whipping cream
- 1 (20 ounce) package refrigerated cheese tortellini
- 1/2 cup pre-grated Parmesan cheese, plus more for garnish

Instructions
- Cook Bacon: In a large skillet, cook bacon until crispy. Remove and set aside.
- Cook Chicken: Season chicken with pepper and 1 tsp salt. In the same skillet, cook chicken until browned and cooked through. Remove and set aside.
- Make Sauce: In the same skillet, sauté sundried tomatoes, shallot, garlic, Italian seasoning, and red pepper. Stir in tomato paste, broth, and cream. Simmer until thickened.
- Add Tortellini: Cook tortellini according to package instructions. Drain and add to the sauce.
- Combine Ingredients: Crumble bacon and add to the skillet along with chicken. Stir in Parmesan cheese.
- Serve: Garnish with fresh basil and extra Parmesan before serving.
