  •  8 slices bacon chopped
  •  4 tablespoons butter
  •  4 large Russet potatoes peeled and cubed
  •  1 medium onion finely chopped
  •  2 cloves garlic minced
  •   teaspoon cayenne pepper
  •   cup flour
  •  2 cups low sodium chicken broth
  •  2 cups 2% milk
  •  1 cup shredded sharp cheddar
  •  1 cup shredded white cheddar
  •   cup sour cream
  •   cup chopped chives
  •  Salt and pepper to taste

  1.  In a Dutch oven or heavy stockpot over medium heat brown the bacon. Using a slotted spoon remove the bacon from the pan reserving the grease. Add enough butter to make 2 tablespoons of fat. Melt the butter over medium heat. Add the potatoes and onions to the pan cooking for 5 minutes or until the onions are soft. Add the garlic and the cayenne pepper; cooking for 1 minute stirring constantly. Using a slotted spoon remove the potatoes, onions and garlic to a bowl or plate; reserving any fat in the pan.
  2.  Melt enough butter to make 4 tablespoons of fat. Sprinkle in 1/4 cup flour and whisk to combine. Cook for 2-3 minutes stirring constantly. Whisk in the chicken broth and milk in several intervals alternating between the two.
  3.  Add the potatoes, onions and garlic back to the pot and simmer until the potatoes are tender.
  4.  Whisk in both shredded cheeses until melted. Remove from the heat and stir in the bacon, sour cream, chives and salt and pepper to taste.

Serving Tips:

  1. Garnish with Fresh Herbs: Before serving, garnish each bowl of Loaded Potato Soup with freshly chopped green onions, chives, or parsley. These herbs add a pop of color and freshness to the dish, enhancing its overall presentation and flavor.
  2. Add Extra Toppings: Get creative with additional toppings for your Loaded Potato Soup. Consider adding extra shredded cheese, crispy bacon bits, sour cream, or diced avocado for a customizable touch. Let your guests personalize their bowls according to their preferences.
  3. Serve with Crusty Bread: Accompany your Loaded Potato Soup with slices of warm, crusty bread or dinner rolls for dipping. The combination of creamy soup and crusty bread is irresistible and makes for a satisfying and comforting meal.
  4. Pair with a Side Salad: For a well-rounded meal, serve Loaded Potato Soup alongside a fresh green salad tossed with your favorite dressing. The crispness of the salad provides a refreshing contrast to the creamy soup and adds nutritional value to the meal.
  5. Portion into Bread Bowls: For a fun and whimsical presentation, hollow out individual bread rolls or bread bowls and ladle the Loaded Potato Soup into them. Not only does this add visual appeal to the dish, but it also allows for convenient and mess-free serving.

Storage Tips:

  1. Refrigerate Leftovers Promptly: If you have leftover Loaded Potato Soup, transfer it to an airtight container or sealable soup pot and refrigerate it promptly. Proper refrigeration helps maintain the soup’s freshness and prevents bacterial growth.
  2. Consume Within 3-4 Days: Loaded Potato Soup can typically be stored in the refrigerator for up to 3-4 days. Be sure to consume it within this timeframe to ensure optimal taste and quality.
  3. Reheat Gently: When reheating leftover Loaded Potato Soup, do so gently over low to medium heat on the stovetop. Stir the soup occasionally to ensure even heating and prevent scorching.
  4. Add Liquid if Needed: As the soup sits in the refrigerator, it may thicken slightly. If the consistency becomes too thick upon reheating, simply add a splash of chicken broth or milk to thin it out to your desired consistency.
  5. Avoid Freezing: Due to the dairy content, Loaded Potato Soup may not freeze well and can separate or become grainy upon thawing. It’s best to enjoy the soup fresh or refrigerated for the best taste and texture.

  1. Can I use different types of potatoes for this recipe?
    • Absolutely! While the recipe calls for large potatoes, you can use any variety of potatoes you prefer or have on hand. Russet potatoes are commonly used for their fluffy texture, but Yukon Gold or red potatoes can also work well and add their own unique flavor.
  2. Is it possible to make this soup vegetarian or vegan-friendly?
    • Yes, you can easily adapt Loaded Potato Soup to be vegetarian or vegan-friendly. Simply omit the bacon and use vegetable broth instead of chicken broth. For a vegan version, substitute dairy milk with almond milk or coconut milk, and use vegan cheese and sour cream alternatives.
  3. Can I make Loaded Potato Soup ahead of time and reheat it later?
    • Absolutely! Loaded Potato Soup reheats well and can be made ahead of time for convenience. Prepare the soup as directed, then allow it to cool completely before transferring it to an airtight container and refrigerating it. When ready to serve, gently reheat the soup on the stovetop over low heat, stirring occasionally until warmed through.
  4. Can I freeze Loaded Potato Soup for future use?
    • While it’s possible to freeze Loaded Potato Soup, the texture of the potatoes and dairy-based ingredients may change slightly upon thawing. If you choose to freeze the soup, do so in an airtight container or freezer-safe bag for up to 2-3 months. Thaw the soup overnight in the refrigerator before reheating it on the stovetop.
