For the Meatloaf:
- 1 1/2 pounds ground beef (85% lean)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 large egg
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
For the Loaded Potatoes:
- 4 large russet potatoes
- 2 tablespoons butter
- 1 cup sour cream
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1/2 cup green onions, chopped
- 1 cup shredded mozzarella cheese (optional)
- Salt and pepper to taste
- Olive oil for drizzling (optional)
Instructions
- Prepare the Meatloaf: Mix ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper. Form into a loaf shape.
- Prepare the Potatoes: Bake potatoes, scoop out flesh, mix with butter, sour cream, cheddar cheese, green onions, salt, pepper. Spoon mixture over meatloaf.
- Bake: Top with mozzarella cheese, bake until meatloaf is cooked through and potatoes are golden.

- You can customize the toppings with additional green onions, cheese, and sour cream for serving.
