- 3/4 cup sour cream
- 3/4 cup milk
- 6 strips bacon, preferably thick cut
- 3 1/2 lbs. Yukon Gold potatoes
- 3 teaspoons salt
- 6 tablespoons salted butter, at room temperature
- 1/2 teaspoon black pepper
- 2 cups orange cheddar cheese, shredded from a block
- 4 green onions, sliced
Instructions
- Prepare the potatoes: Peel and cut the potatoes into chunks, then place in a large pot with cold water and 2 teaspoons of salt. Bring to a boil and cook until tender.
- Cook the bacon: In a skillet, cook the bacon until crispy. Remove and chop into small pieces.
- Mash the potatoes: Drain the cooked potatoes and mash with butter, sour cream, milk, salt, and pepper until creamy.
- Add toppings: Stir in most of the cheddar cheese, green onions, and chopped bacon. Top with remaining cheese and bacon.
- Bake: Bake the loaded mashed potatoes until the cheese is melted and bubbly.
Notes
- You can leave the skin on the potatoes for added texture and nutrition.
