Description

A tropical, creamy blend that’s popular in Colombia, this drink combines the tartness of fresh lime juice with the rich smoothness of coconut cream. It’s like a vacation in a glass, offering a perfect balance of citrus and coconut flavors with a luxuriously smooth texture.

Ingredients

Units Scale
  • 1 cup coconut cream (cream of coconut)
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 3 cups ice cubes
  • 23 tablespoons sugar (adjust to taste)
  • 1/2 cup cold water
  • Optional garnish: lime wheels, coconut flakes, mint leaves

Instructions

  • In a blender, combine coconut cream and lime juice
  • Add sugar and cold water
  • Add ice cubes
  • Blend on high speed until smooth and creamy (about 1-2 minutes)
  • Taste and adjust sweetness or lime juice as needed
  • Pour into glasses
  • Garnish with lime wheels and coconut flakes if desired

Notes

  • Don’t confuse coconut cream with coconut milk; cream is thicker
  • Can use cream of coconut (like Coco Lopez) for a sweeter version
  • Fresh lime juice is essential – avoid bottled juice
  • For a thicker consistency, use less water or more ice
  • Can be made ahead and re-blended when ready to serve
  • For an adult version, add 1 oz white rum per serving
