Description

These Lemon Oatmeal Crumble Bars are a delightful combination of sweet and tangy flavors. A buttery oat crust and topping encase a zesty lemon filling, creating a perfect balance of textures and tastes.

For the Crust & Topping:

  • 7 tablespoons (99g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) light or dark brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (85g) old-fashioned oats or quick oats (not instant)

For the Lemon Filling:

  • 1 can (14 ounces) full-fat sweetened condensed milk
  • 6 tablespoons (90ml) lemon juice (from about 2 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)

Instructions

  1. Prepare the Crust & Topping: Mix butter, sugar, and vanilla. Add flour, baking powder, salt, oats. Press 2/3 of the mixture into a pan.
  2. Make the Lemon Filling: Combine condensed milk, lemon juice, and zest. Pour over crust.
  3. Top with remaining crumble mixture: Sprinkle the reserved crumble on top of the lemon filling.
  4. Bake: Bake at 350°F for 25-30 minutes until golden brown.
  5. Cool and cut: Let it cool, then cut into bars.

Notes

  • Feel free to add a sprinkle of powdered sugar on top for extra sweetness.
  • These bars can be stored in an airtight container for up to 5 days.
